Q:
Kristen, you’re a writer and bon vivant. What are you doing, teaching a nutrition class?
A:
My parents were a paradox - dad an MD, mom an Ed.D. I can’t help but want to teach about mental and physical health as well as about creativity and absurdity… because I feel more bon and vivant and also creative when I’m healthy.
Q:
In your cookbook lecture you said sifting flour started the women’s movement. Why do you now think white flour = white supremacy and the patriarchy?
A:
Before they started using steel rollers to mill wheat, white flour for pastries was made by sifting the fiber out of stone ground (whole wheat) flour. By the 1900s you could purchase cake flour so there was never any real reason to sift it, so it was just one more way to keep women in the kitchen. Meanwhile wheat flour was seen as “impure” which was a mistake that caused a lot of nutrient deficiency-based illnesses. And yet, refined flour has become a curse on poor (“unrefined” aka “whole”) people.
Q:
Why are you spending your time on diet videos when there’s a world to save out there? Aren’t you more interested in planting trees, anti-idling, and other environmental problems?
A:
We have to change our ways and FAST. We all need to get motivated to shift to a plant-based diet! Anything I can do to help make it easier to change our habits is meaningful to me. PLUS, the plantier we eat, the better we feel, and the more energy we’ll have to handle the upcoming revolution.
